While I don’t like eating so late at night, I have been getting home at 11:00pm or later. Since I don’t sleep well on a empty stomach, I need something to eat. The other night, I made a filling-but-not-too-heavy corn chowder!
What makes this so fast is that I had boiled potatoes in the fridge and used frozen corn. Had it not been 1am, I might have made it differently!
Late Night Corn Chowder
Makes one large serving. Who else is up at that time?
1-2 tablespoons butter
2 tablespoons onion, diced
2 tablespoons red pepper, minced
1/2 – 3/4 cup potatoes, boiled and diced (I used Yukon Golds)
1 cup corn kernels (frozen)
about 1 cup water (you could probably use chicken stock here)
1/4 cup milk or half-and-half
salt and pepper
Melt butter in a large saucepan over medium-high heat. It’s 1am, you need to cook this fast. When it’s nice and hot, toss in the onion and pepper pieces and give them a good stir. When they start to soften very slightly, add the potatoes. If you had them in the fridge, give them a few extra minutes. If they’re still warm, just toss them in and give them a swirl.
Next, clear the center of the pan and add the frozen corn. Cover and let the corn thaw. Pour in some water, enough to not-quite cover the veggies. Reduce heat to medium, cover, and let simmer for a few minutes. I like to mash up the potatoes a bit with a spoon so they’re in smaller pieces. When everything is nice and heated throughout, add your milk or half-and-half, salt, and pepper to taste. Warm until hot but not boiling. Garnish with white pepper and scallions for a nice pop of flavor.
I was too lazy to make biscuits, but biscuits or grilled bread would have been lovely with it. I will post my favorite biscuit recipe later!
