This morning was strange. I woke up at 6:15am (not normal!), was up for an hour or two in which I accomplished several things, then ran out of steam and took a nap. Then I was ready for breakfast! I decided to make something substantial, a cobbled-together veggie not-scramble…
Start with some hash browns or skillet potatoes. Boil some small or diced potatoes (I used Yukon golds, which were HUGE, so I diced them) for about 15 minutes or until tender. Drain. Brown over medium-high heat with some diced onion. These are also delicious as a side. Yum.
Next I sauteed some diced onion, red and green pepper, and some faux ground beef leftover from tacos. Two cloves of minced garlic and some oregano rounded out that pan. I layered that on top of the potatoes. Next up: two eggs, scrambled gently. They are ridiculously bright yellow because I used my amazing eggs from the farmer’s market.
A diced Roma tomato added more color (salsa would work; we’re out), and grated cheddar cheese and a dollop of sour cream made it bad for me. Each layer had a little salt and pepper added, too. Muhaw. And… voila!
A mountain of delicious breakfast! I enjoyed mine with some fresh coffee.
Some salsa and a tortilla would make it Tex-Mex, but it was pretty darn good as it was.
