I like the Holey Bread article!…I’m newer to bread baking and seem to struggle with getting the holey-ness and crumb that I want out of my breads. I think we may try making those english muffins this weekend…
Articles that make me go, “Ohhhh, THAT’s why!” always make me happy. If you’re looking for a crusty bread with a holey interior, try the pain a l’ancienne from the same book (it’s on my recipes page). The shaping is the only hard part and it tastes SO good.
